Gluten Free Chocolate Chip Coconut Cookies


These chocolate chip coconut cookies are melt in your mouth delicious. The recipe uses a gluten free chocolate cake mix as the base. With the addition of butter, an egg, some coconut and chocolate chips you have a new cookie that you will be making over and over again. Literally just that simple! No one will ever guess these are gluten free, let alone made from a baking mix. I really like when something so easy tastes great.

Gluten Free Butter Coffee Cake

The crisp buttery topping on this coffee cake makes it a special treat for a weekend breakfast. The cake is rich and flavorful under the crunchy, cinnamon sugar layer. This disappears quickly in my house and I am sure it will go just as fast in yours. The recipe for the topping works perfectly as a nice topping for any muffin. I especially love it over blueberry muffins in the summer.


You can see all the yummy goodness in the topping.  It's a surprise that this can be gluten free as well as delicious.

Gluten Free Sun Dried Tomato Corn Muffins

Full of flavor with a surprise taste from the smokey tomatoes, corn and a touch of garlic, these muffins will become a favorite for cocktails and to serve as a quick appetizer. They can be made earlier in the day and taste delicious at room temperature with a crisp glass of wine or cocktail. The idea came from       an Every Day Italian Cookbook.  I substituted the fresh garlic, which I thought was too much, for a dash of garlic powder. Corn muffins are so versatile and this combination works great.


Too make them gluten free I used a Gluten Free All-Purpose Baking Mix that I love.

Beer & Cheese & Pepper Hushpuppies

Gluten Free Beer makes these hush puppies really light and the two different types of peppers give them a delicious sweet and spicy taste.  I made them from a recipe in Better Homes and Gardens magazine.  I changed the amounts of cheese and pepper to my taste and I think they are even better than the original recipe. You can vary the amount of hot and sweet pepper according to what you like. I love that the gluten free aspect of the recipe goes unnoticed. It was so easy to adapt the original recipe since gluten free beer is widely available today.


The fried appetizer goes especially well with some hot pepper jelly for dipping. I used Trappist Hot Pepper Jelly, yet choose a favorite of yours and ENJOY!

Gluten Free Mini Pizza Snacks


These mini pizzas are a great nutritious bite anytime. They are so easy to make and would be an ideal snack to pop in the oven after a busy day of errands or when the kids get home from school. Make the dough ahead of time so you can assemble them whenever you want. They are so much healthier than the frozen boxed variety of pizza snacks and taste better too. Any topping works well, I made some vegetarian, plain, and pepperoni. A great way to use up that half a green pepper and the small amount of cheese and meat in the fridge. The dough has a little olive oil and some ground flaxseed in it for extra health benefits.

Cherry Chocolate Chip Cupcakes

Full of fresh chopped cherries and chocolate chips these cupcakes are so decadent they will  soon become a special treat when a fabulous dessert is what you are looking for. The secret that no one needs to know is that they are made from a convenient gluten free baking mix! I started with a gluten free chocolate lavender cake mix and added a few extras and came up with this wonderful combination. Cherry and chocolate always go great together and the subtle flavor of lavender is a surprise that makes these cupcakes truly unique.


A  sprinkling of powdered sugar is all you need to serve.
